Ingredients
2 cups Baking Essentials Extra Fine Almond Flour
1/2 cup Baking Essentials Coconut Flour
8 ounces of full-fat cream cheese, softened
4 eggs, room temperature
1/4 cup butter, melted and cooled
1 tablespoon of psyllium powder
½ cup Sweet Best Stevia + Erythritol Blend
1 ½ teaspoons baking powder
½ teaspoon sea salt
Cinnamon Swirl
2 tablespoons ground cinnamon powder
1/4 cup of granulated sugar substitute
Instructions
Cinnamon Loaf
1.Preheat oven to 350 degrees.
2.Line the bottom of 9 x 5-inch loaf pan with a parchment paper.
3.In a large bowl, combine and mix the cream cheese, melted butter, vanilla extract, and eggs one at a time.
4.Add the coconut flour, almond flour, psyllium powder, sugar substitute, baking powder, and sea salt. Mix the batter until fully incorporated at medium speed for 2 minutes. Batter will be thick.
Cinnamon Swirl
1. Combine the granulated sugar substitute and cinnamon powder. Set aside two tablespoons for the topping of the loaf.
2 .Pour half of the batter into the 9×5 inch loaf pan. Sprinkle the cinnamon-sugar mixture on top of the batter and using a toothpick gently swirl the cinnamon mixture.
3. Add the other half of the batter and sprinkle the remaining cinnamon-sugar mixture on top of the bread.
4.Bake for 35-40 minutes or until an inserted toothpick comes out clean.
5.Allow the bread to fully cool for about 10 minutes before removing from the loaf pan.
