Keto Coconut Flour Chocolate Pound Cake

Ingredients

8 large eggs
8 oz. cream cheese 
5 tablespoons unsweetened cocoa powder
½ cup unsalted butter
¾ cup Sweet Best Erythritol
1 ½ cup Baking Essentials Coconut Flour
½ cup full-fat sour cream
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons vanilla extract

Instructions

1. Preheat your oven to 350 degrees.

2.Grease your 10-inch loaf pan generously with butter. 

3.In a medium-sized bowl combine your coconut flour, baking powder, and salt. Set aside.

4.In a large bowl, beat together the butter, cream cheese, Sweet Best Erythritol, vanilla extract until light and fluffy.

5.Add the eggs one at a time to the butter and cream cheese mixture.

6.Add the dry ingredients to the wet ingredients and mix on low setting until combined.

7.Once the two mixtures are fully combined stop using the electric mixture and fold in the sour cream gently until incorporated. Do not overmix.

8.Pour the batter in the loaf pan and bake for 1 hour and 15 minutes to 1 hour and 30 minutes.

9.Check for doneness with a toothpick at the 1 hour baking time. If not done allow the cake to bake for the necessary additional time. Cake is done if a toothpick comes out clean with just a small amount of cake crumb.
