Keto Munchkins

Ingredients

1 Cup Whole Walnuts
1/8 tsp. Salt
1/4 Cup unsweetened Cocoa Powder
1/2 Cup unsweetened Peanut Butter
1/4 Cup Sweet Best Erythritol
Coconut Flour as needed
Water as needed
1/4 Cup Sweet Best Sugar-free Chocolate
1/2 tsp. Pure Vanilla

Instructions

1.In a food processor combine the walnuts and  salt. Process on high for 5 to 10 seconds, or until the nuts are broken up into small pieces.

2.Add the unsweetened cocoa powder, unsweetened peanut butter, vanilla, and Sweet Best Erythritol. Process until combined. Add coconut flour or water, one tablespoon at a time, as needed to achieve the right consistency. The batter should be easy to hold and roll into a ball.

3.Pulse in the chocolate chips.

4.Line a baking sheet with parchment paper.

5.Roll the dough to form 18 bite-sized balls and place them on the parchment paper.

6.Place the baking sheet in the freezer for 10-15 minutes or until firm.
