Ingredients
6 tablespoons unsalted butter (room temperature)
1 cup Sweet Best Erythritol
4 ounces cream cheese, softened
3 eggs
1/4 cup sour cream
1 cup unsweetened peanut butter
1 ½ cup Baking Essentials Extra Fine Almond Flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup of chopped peanuts to sprinkle on top
1/4 cup of melted unsweetened peanut butter to drizzle on top
Instructions
1.Preheat oven to 350 degrees
2.Grease a 8×8 inch pan.
3.In a large bowl using an electric mixer combine the softened butter, Sweet Best erythritol, vanilla extract, and cream cheese.
4.Once well combined and light and fluffy add the sour cream and peanut butter.
5.Add the eggs one at a time until fully combined
6.Add Baking Essentials Extra Fine almond flour, baking powder, and salt.
7.Sprinkle the 1/4 cup chopped peanuts over the batter.
8.Bake at 350 degrees for 30 – 35 minutes or until an inserted toothpick comes out clean.
9.Allow the bars to cool on a baking rack for 20 minutes.
10.While the bars are cooling melt the 1/4 cup of peanut butter to drizzle on the top of the bars.
11.Drizzle the top of the bars with the melted peanut butter and allow the bars to set another 10 minutes before slicing.
