Ingredients
1/2 cup (125ml) heavy cream
1 teaspoon vinegar
1 large egg
1/3 cup (75g) cold butter
2 cups Baking Essentials Extra Fine Almond Flour
½ cup whey protein isolate
1 teaspoon xanthan gum
2 teaspoons baking powder
Instructions
1.In a mixing bowl, whisk together the heavy cream and vinegar. Let it rest for 5 minutes.
2.Whisk in the egg. Combine the almond flour, whey protein isolate, baking powder and xanthan gum and stir until the batter is thick.
3.Add a tbsp of cold water if it looks dry.
4.Grate the cold butter into the batter and mix thoroughly.
5.Use wet hands to form a 12 biscuit shapes of dough. Place them on a cookie sheet lined with parchment or silicone.
6.Bake for 10-15 minutes at 400°F / 200°C.
7.They are done when they are a nice golden brown.
