Ingredients
1 1/2 cup shredded mozzarella cheese
2 oz. cream cheese
1 cup Baking Essentials Extra Fine almond flour
2 tablespoons Baking Essentials coconut flour
1 teaspoon baking powder
1/4 cup grated parmesan cheese
2 teaspoons Sweet Best Stevia + Erythritol Blend
2 eggs
2 tablespoons melted butter
1 egg white (for egg wash)
Instructions
1. Preheat oven to 350F. Grease cupcake pans to avoid any sticking and set aside.
2. Melt the mozzarella and cream cheese.
3. In a medium-size bowl combine almond flour, coconut flour, baking powder, grated parmesan cheese, and Sweet Best Stevia + Erythritol and mix well.
4. In a mixing bowl, combine the dry ingredients with the cheese mixture. Then add in eggs and 1 tablespoon of melted butter and mix well until all is kneaded together.
5. Scoop out dough with an ice cream scooper (about a 2″ ball) and roll until smooth. Place in cupcake pan.
6. Brush rolls with an egg wash to give a nice golden brown color and bake for 12-14 minutes.
7. Remove from oven and brush 1 tablespoon of melted butter over freshly baked rolls.
